There are various types of Soba all over Japan, but in Fukui Prefecture, "Echizen Oroshi Soba" is famous for its cold noodles with plenty of grated daikon radish, and chopped green onions. The beginning of Echizen Oroshi Soba is more than 400 years ago. Tomimasa Honda, who came to Fuchu (currently Echizen City) in 1601, came from Fushimi, Kyoto.
It is said that Echizen Oroshi Soba is the origin of the soba that was eaten with grated daikon radish to encourage people in the castle to cultivate soba as a rough food to prepare for war and disasters, and also to improve their health.

The quality of Soba is related to latitude, and it is said that there are many buckwheat flour with excellent taste and flavor in the area from the 36° latitude line to the 38° latitude line in the north latitude, and Fukui is located on the 36° line. Fukui Gengen soba has a small grain, thin skin, and is characterized by being milled by traditional stone milling, which does not impair the unique flavor of soba.
