What is Morioka Jajamen - a local dish of Iwate Prefecture

"盛岡じゃじゃ麺 (Morioka Jajamen)" is a noodle dish of meat, miso, cucumber and green onion, topped with boiled noodles, grated ginger, grated garlic, vinegar and chili oil.

You can adjust the amount of seasonings such as grated ginger, grated garlic, vinegar and chili oil by yourself. The best way to eat Morioka Jajamen is to mix noodles well with ingredients such as meat miso and seasonings.

And the dish that is inseparable from "Morioka Jajamen" is the egg soup called "チータン (Chitan)". When you have finished eating jajamen, drop some raw eggs on the remaining plate, pour the boiled noodle soup and add salt, pepper to adjust the taste.

At the end when you almost finish eating,tell the staff "Chitan please", they will boil soup in a plate for you.

Generally, “Jaja noodles” are uesd by Chinese noodles to make them sweet and spicy, but “Morioka Jajamen” is made with flat noodles like udon and fried with meat miso and we can add our favorite seasoning.
