One of Akita's representative gourmet dishes is "Inaniwa Udon". It is widely eaten both inside and outside the prefecture, mainly in Inawamachi, Yuzawa City, Akita Prefecture. Dried udon made by hand rolling is a flat noodle that is slightly thicker than Hiyamugi. It features a unique smooth throat and a chewy texture.

佐藤養助商店 (Sato Yosuke store). Founded over 150 years ago, it is a long-established store with 14 stores inside and outside the prefecture.
The technique handed down from the child to the grandchild is performed by hand by craftsmen, from the selection of ingredients to the finished product, creating a unique texture with an appropriate texture and smoothness.
