"うさみ亭マツバヤ (Usamitei Matsubaya)" is a udon shop with a store in Chuo-ku, Osaka, and is known as the origin of きつねうどん (Kitsune Udon). It started when the founder opened "松葉屋本舗 (Matsubaya Honpo)" in 1893. Over the years, it is now a specialty store, with many customers coming from far away. At first, as a side dish of udon, the deep-fried tofu was served in a separate plate, and it was said "konkon udon". However, since many people put the deep-fried tofu into the udon and eat it, and that made the origin of Kitsune udon. Nowadays, it has been widely covered by the media, and has been fully recognized.

Speaking of Osaka udon, it had the image of a soup that it was transparent to the bottom of the bowl, but that of "Usamitei Matsubaya" has a deep appearance reminiscent of Kanto-style.

The flavor of the soup is irresistible. Arrange 10 pieces in a large pan to prepare, stack 10 layers and season with kelp, sugar, salt, etc. (without using soy sauce) and cook with the second stock. It seems to be plump so far, and I'm always admired that it matches nicely soft noodles.

Ojiya udon is an pot udon with half a bowl of rice and half a bowl of udon put in, and it's very interesting to see that the rice is not put into the soup after you've finished eating, but rather it is pre-boiled.
