【ANPAN】Not just the taste, but the rhythm of that name is so cute too!

あんぱん(Anpan) is one of Japan's most famous confectionery breads. Anpan is a good mix of "bread", a food culture from the US and Europe, and "あん(an)", an ancient Japanese ingredient. However, I don't think there are surprisingly few people who know about Anpan, such as when it started and how it was born.

木村屋 (Kimuraya) is a long-established Japanese bakery founded by Yabei Kimura in 1869. At that time, people were enthusiastic about civilization, and they were gradually incorporating Western culture. Of course, Western food culture called bread is gradually becoming known.

However, the bread at that time was not the plump and sticky bread as it is today, but the ones that were hard and had little water content were the mainstream. Perhaps it wasn't that much liked by the Japanese, whose staple food was rice and brown rice. Perhaps because of that, when Kimuraya was founded, bread meals were not yet widespread in ordinary households.

Five years after the founding of Kimuraya, in 1874 (Meiji 7), Yasubei Kimura and his second son were making trial and error to spread bread food in Japan. So they remembered the sake buns. By using the sake, they thought, "Is it easy for Japanese people to make soft bread?"

Then, the dough made from fermented liquor and wrapped in salted cherry and cherry blossoms is the first Anpan.

Fermented liquor, sweet bean jam, and cherry blossoms, which are familiar to Japanese people, and Western bread were added to it, creating a Japanese-Western eclectic bread, Anpan, that gives an image of the civilization of the time.

At Kimuraya, even after 100 years have passed since its founding, they continue to protect the fermented liquor and the manufacturing method at the time of development.

Not only fermented varieties of liquor, but also flour and fermentation control suitable for dough of liquor varieties, and carefully selected red beans from Tokachi in Hokkaido are cooked by their own method.

Nowadays, new Anpan is being created one after another based on Kimuraya's traditional Anpan. You can enjoy a variety of seasoned bean jams such as "chestnut", "plum", "potato", "white peach", "tangerine", "mugwort", "mango", "chestnut pumpkin" etc.
